Cheddar and Spring Onion Soda Bread

I used buttermilk left over from making curds instead of the lactose free milk and lemon juice. Trying to keep the recipe slightly more healthy I used 30% reduced fat mature cheddar and I didn’t have any chives. The loaf was still very cheesy . I didn’t smooth off the loaf as it suggests in the recipe, I prefer the craggy look.

I suspect if you wanted to make a loaf with glutenous flour you could just substitute standard plain flour for the gluten free plain flour and omit the xanthan gum.
