Squash, Winter Herb and Crunchy Butter Bean Pie

Butter Bean Pie

This recipe was found when a big squash arrived in my veg box. What a delicious find it was, definitely one for a special occasion.

As ever I swapped out the honey for maple syrup and didn’t worry too much about the quantity of garlic going into the pan, there are many comments on the original recipe suggesting it will be overpowering. But as the garlic is cooked before being mixed it it adds a subtle flavour. I also used Buckwheat flour for the pastry as it’s gluten free.

The way the butter beans crack and explode gives a nice crunchy topping.
