Mushroom, Squash and Caramelised Garlic Lasagne

Another tasty find to help use a squash in a veg box.

I chopped up the whole squash and roasted it in one go, then divided it into sufficient quantities for both this recipe and the Squash, Winter Herb and Crunchy Butter Bean Pie which I made at a later date after freezing the squash.

Plenty of lovely local organic veg

I made buckwheat lasagne as I don’t like the shop bought gluten free version, so it came out a little less solid than I suspect it’s meant to be. I didn’t have any Madiera, but could tell that it would have been a nice addition.

This will be made again, maybe when I find another Giant Puffball and I’m brave enough to cook it.
