Campfire Stew.

I came across this recipe a few weeks ago and fancied giving it a go.

Slow Cooker Campfire Stew

It’s intended to be cooked in a slow cooker, but I opted to do it on the top of our multifuel stove. A couple of slight alterations, I don’t do celery, so that was omitted.

I fried up the onions and garlic, then added peppers. Got that all hot before adding spices, beans and tomatoes. That was bubbling before the gammon joint went in. My joint was 750grams not 1kg and I replaced the Worcestershire Sauce with Hendersons.

It gently bubbled away on the stove top for 4 hours. Jacket potatoes were wrapped in a double layer of foil and put in the fire box for 1 hr 15mins. They could have done with a little bit longer to crisp up a touch more. The gammon was then shredded and popped back in the pot until it was served.
